Simply Delicious Crawfish Casserole - cooking recipe

Ingredients
    1 (8 oz.) cream cheese, cubed
    1 stick margarine
    2 Tbsp. margarine
    2 lb. crawfish tails
    1 large onion, chopped
    1 large bell pepper, chopped
    8 oz. fresh mushrooms, sliced
    1 can cream of mushroom soup
    2 c. cooked rice
    1 Tbsp. garlic salt
    1/2 tsp. red pepper
    1/8 tsp. white pepper
    2 c. grated Velveeta cheese
    1 can fried onion rings
Preparation
    In a double boiler, melt stick of margarine and add cubed cream cheese.
    Stir over low heat until cheese is melted.
    In a large skillet, melt 2 tablespoons margarine and saute crawfish tails, onions, bell pepper and mushrooms until seasonings are limp.
    Add the mushroom soup and cooked rice.
    Stir in garlic salt and peppers.
    Add the cream cheese and margarine mixture to crawfish mixture.
    Stir and check for seasoning.
    Put in greased casserole dish.
    Top with grated Velveeta cheese and fried onion rings.
    Bake in 350\u00b0 oven for 30 minutes.
    Serves 8.
