Ingredients

3/4 c. shortening
1 1/2 c. sugar
3 eggs
2 1/4 c. sifted cake flour
2 1/2 tsp. baking powder
1/2 tsp. salt
3/4 c. milk
1 c. fresh grated coconut
Preparation

In large mixing bowl, cream shortening and sugar.
Beat until light and fluffy.
Add eggs one at a time beating well.
Combine flour, baking powder and salt.
Add flour mixture to creamed mixture; add alternately with milk beginning and ending with flour mixture.
Stir in vanilla
