Cashew Chicken - cooking recipe

Ingredients
    4 chicken breasts (raw), boned and cut in strips
    1/4 tsp. salt
    2 large onions, cut in wedges like orange slices
    1 1/2 c. celery, diagonally sliced
    1/2 c. salad oil
    1 1/4 c. chicken broth
    1 tsp. sugar
    1 Tbsp. cornstarch
    1/4 c. soy sauce
    1 can water chestnuts (optional)
    1 can bean sprouts, drained
    1 c. cashews
Preparation
    Sprinkle chicken with salt.
    Cook in 1/2 cup salad oil about 5 minutes.
    Remove from skillet and set aside.
    Put onions and celery in skillet and stir-fry 3 minutes over high heat.
    Add 1/2 cup broth and cook 5 minutes.
    Stir often.
    Combine sugar, cornstarch and soy sauce with remaining broth and pour over vegetables and cook until thick.
    Add chicken, sprouts and cashews. Heat through and serve.
    Do not cook too long.
    Serve with rice or noodles.
