Mexican Cornbread - cooking recipe
Ingredients

1/2 c. cooking oil
1 c. yellow creamed corn
1 1/2 c. self-rising cornmeal
1/2 c. chopped onion
1 c. buttermilk
2 eggs
2 to 3 jalapeo peppers, chopped
2 c. grated Cheddar cheese
Preparation

Combine oil, corn, cornmeal, onion, buttermilk, eggs, chopped peppers and 1 cup cheese.
Put in greased, hot, large iron skillet and sprinkle 1 cup cheese on top.
Bake at 350\u00b0 for 45 minutes.
