Raisin Rice Pudding - cooking recipe

Ingredients
    2 eggs, slightly beaten
    2 c. cooked rice
    1 1/2 c. skim milk
    2 Tbsp. sugar
    1/2 c. raisins
    1 tsp. vanilla
    1/2 tsp. cinnamon or nutmeg
    1/4 tsp. salt
Preparation
    Preheat oven to 350\u00b0. Combine all ingredients. Set a 1 1/2-quart baking dish in shallow pan on oven rack. Pour water to 1-inch depth around dish. Pour pudding in baking dish. Bake for 45 minutes or until knife inserted in pudding comes out clean. Yield: 8 servings.
