Baked Country Ham - cooking recipe

Ingredients
    1 country ham (12 to 14 lb.)
    1 c. brown sugar
    brown sugar
    fruit juice or apple cider
Preparation
    Soak ham overnight in cold water.
    Scrub ham with a stiff brush and rinse thoroughly.
    Place, skin side down, in a large kettle and cover with cold water.
    Cover and simmer 20 to 25 minutes per pound.
    Add hot water as needed to keep ham covered. Ham is done when shank pulls loose from bone. Remove ham from water and cool, enough to handle.
    Remove skin and trim excess fat to a 1/2-inch layer.
    With a sharp knife, score fat.
    Sprinkle with brown sugar. Add the cup of brown sugar to the juice. Bake ham at 375\u00b0 about 20 minutes, basting frequently with the juice. Remove to serving platter and garnish with spiced peaches or garnish of your choice.
