Shrimp Scampi - cooking recipe

Ingredients
    1 c. olive oil
    2 Tbsp. minced parsley
    1 to 2 cloves garlic, minced
    2 Tbsp. dry sherry (optional)
    1/2 tsp. salt
    1/4 tsp. pepper
    1 lb. large raw shrimp, peeled and deveined (may be frozen)
    Near East Rice Pilaf
Preparation
    Combine first 6 ingredients in jar.
    Cover and shake vigorously.
    Pour marinade over shrimp; cover and refrigerate 3 to 4 hours.
    Saute in marinade until shrimp turn white, about 3 to 4 minutes.
    Serve shrimp over cooked rice pilaf.
    Makes 3 servings.
