Almond Cookies - cooking recipe

Ingredients
    1 c. natural almonds, coarsely chopped
    3/4 c. flour
    1/4 c. light brown sugar, packed
    2 Tbsp. granulated sugar
    1/2 tsp. ground cinnamon
    1/2 tsp. baking powder
    dash of salt
    1 egg, lightly beaten
    3 Tbsp. olive oil
Preparation
    Spray a 9-inch square baking pan with olive oil cooking spray. Combine almonds, flour, sugars, cinnamon, baking powder and salt in a large bowl.
    Stir in egg and olive oil until blended. Transfer to prepared pan and, with floured fingers or spatula, press dough evenly into pan.
    Bake at 325\u00b0 for 20 minutes.
    Remove from oven.
    Cut into diamonds.
    Return pan to oven and bake 20 minutes more.
    Cool before carefully removing cookies from pan. Yield:
    20 small cookies.
