Herbed Tomato Chicken - cooking recipe
Ingredients

2 medium onions, sliced
2 cloves garlic, minced
3 whole medium chicken breasts, skinned and halved lengthwise
1 (7 1/2 oz.) can tomatoes, cut up
1/2 c. tomato sauce
1 (2 1/2 oz.) jar sliced mushrooms, drained
1/4 c. chopped green pepper
1 tsp. dried basil, crushed
1 tsp. salt
1 bay leaf
1/4 c. dry white wine
Preparation

In skillet, combine onions, garlic and 1/2 cup water.
Bring to boiling.
Cover and simmer 10 minutes or until onion is tender. Drain.
Add chicken to skillet.
Combine undrained tomatoes, tomato sauce, mushrooms, green pepper, basil, salt, bay leaf and dash of pepper.
Pour over chicken, cover and simmer for 30 minutes.
Stir in wine and cook, uncovered, for 15 minutes more.
Remove bay leaf. Skim excess fat from juices.
Transfer chicken and sauce to serving platter.
Makes 6 servings.
