5 pork chops (1/2 inch thick)
1 large onion, chopped
1 large green pepper, chopped
1 (14 oz.) can Italian-style stewed tomatoes *
1 (14 oz.) can Cajun stewed tomatoes *
1/2 tsp. salt
1/2 c. shredded Cheddar
green pepper rings for garnish
3/4 c. long grain rice

*Substitute 1 pound 12 ounce can tomatoes, 1 teaspoon chili powder and 1/2 teaspoon garlic powder.
