Potato Stuffed Franks - cooking recipe

Ingredients
    mashed potato mix (enough for 4 servings)
    2 Tbsp. finely chopped onions
    2 Tbsp. snipped parsley (optional)
    1 tsp. prepared mustard
    1/2 c. shredded Cheddar cheese
    1 (10) lb. franks
Preparation
    Prepare potatoes as directed on box and mix with onions, parsley and mustard. Split franks lengthwise not cutting clear through. Place opened, cut side up, on rack in broiler pan. Spread with potato mix; sprinkle with cheese.
    Place in oven; set to broil about 5 inches from broiler unit. Heat until cheese is melted, about 5 to 8 minutes.
