Spanish Rice - cooking recipe

Ingredients
    2 Tbsp. shortening
    1 c. canned tomatoes and juice
    2 c. water
    1 c. uncooked rice
    1/2 c. chopped onion
    1 tsp. salt or to taste
    1 can peas
Preparation
    In heavy skillet over medium heat, add 2 tablespoons shortening.
    Add 1 cup uncooked rice and brown, stirring constantly until golden brown.
    Add chopped onion, tomatoes and juice, water and salt to taste or 1 teaspoon.
    Bring to a full boil; cover tightly.
    Turn down heat to simmer and cook slowly until rice has absorbed most of the water and is tender.
    Add 1 can of peas and heat through.
    Serves 8.
