Curried Chicken Salad With Mango And Cashews - cooking recipe

Ingredients
    3 lb. chicken breasts, poached
    2 Tbsp. fresh lemon juice
    2 mangoes, peeled, pitted and cut into 3/4 inch pieces
    1 c. chopped celery
    4 scallions, including the green part, minced
    1/4 c. plain yogurt
    1/4 c. mayonnaise
    1 1/2 tsp. curry powder
    1/2 tsp. ground cumin
    1 c. roasted cashew nuts, chopped
    2 Tbsp. chopped fresh coriander, if desired
Preparation
    In a large bowl, toss together the chicken, lemon juice and the mangoes.
    Add the celery and the scallions.
    In a small bowl whisk together the yogurt, mayonnaise, curry powder and cumin and add the dressing to the chicken mixture with salt and pepper to taste. Combine the salad well.
