Salami - cooking recipe

Ingredients
    4 Tbsp. quick curing salt
    2 1/2 tsp. mustard seed
    2 1/2 tsp. garlic powder
    2 1/2 tsp. coarse ground pepper
    1 tsp. hickory smoke salt
    1 1/2 tsp. poultry seasoning
    1/2 tsp. allspice
    5 lb. ground beef *
Preparation
    *Two and one-half pounds of venison and 2 1/2 pounds of beef may be substituted for the 5 pounds of beef.
