Squash Relish - cooking recipe

Ingredients
    10 c. squash, ground
    4 c. onion, ground
    5 Tbsp. salt (canning salt)
    2 1/2 c. vinegar (apple cider vinegar)
    4 c. sugar
    2 tsp. dry mustard
    1 tsp. turmeric
    1 tsp. cornstarch
    2 tsp. celery seed
    1 tsp. black pepper
Preparation
    Mix squash, onions and salt and let stand overnight.
    Next day, drain and run cold water through squash mixture.
    Put on stove and add last 7 ingredients and simmer for 30 minutes.
    Pack in jars and seal.
    Makes 8 quarts.
