Pumpkin Roll - cooking recipe
Ingredients

3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
8 oz. cream cheese
1 c. 10x sugar
1 tsp. vanilla
4 tsp. butter
Preparation

Preheat oven to 375\u00b0.
Cream eggs until light and fluffy. Gradually add sugar, pumpkin and lemon juice.
Fold in flour, baking powder and cinnamon.
Pour into well-greased jelly pan lined with wax paper (size 15 x 10 x 1-inch).
Sprinkle top with 1 cup finely chopped nuts.
Bake 15 minutes at 375\u00b0.
Quickly loosen sides with knife and turn onto a thin towel.
Sprinkle with lots of 10x sugar.
Roll from narrow side with towel and let cool.
When cool, unroll to spread with cream mixture.
Pumpkin roll freezes well.
