Fresh Apple Cake - cooking recipe
Ingredients

2 eggs, well beaten
2 c. sugar
1 1/4 c. Wesson oil
3 c. peeled apples, cut and diced fine
3 c. all-purpose flour
3/4 c. candied cherries (optional)
1 tsp. salt
1 tsp. cinnamon
2 tsp. vanilla
1 c. nut meats (walnuts or pecans)
1 tsp. soda
3/4 c. coconut
Preparation

Beat eggs, sugar, Wesson oil, vanilla, salt and cinnamon until creamy in texture.
Add flour and soda mixed together.
Stir in apples, cherries and coconut.
Batter will be very stiff and probably have to be stirred with a spoon.
Spoon in 9-inch tube pan and smooth batter evenly.
Heat oven to between 290\u00b0 and 300\u00b0 and bake 1 hour and 20 minutes.
