Red Beans And Rice - cooking recipe
Ingredients

1 lb. dried red beans
1/2 lb. salt pork
1 onion, chopped
1 garlic clove
1 tsp. salt
1/2 tsp. pepper
2 c. unwashed rice, steamed
Preparation

Soak beans overnight in cold water or boil 2 minutes and let stand 1 hour.
Place beans in a pot; add enough water to cover and bring to a boil.
Add onion, garlic and salt pork.
When half done, add salt and pepper and cook until tender.
Add the rice and cook over low heat 10 minutes.
Serves 8.
