Zucchini Sausage Casserole - cooking recipe

Ingredients
    4 lb. medium zucchini
    1 lb. bulk sausage
    1/2 c. onion, chopped
    1 c. saltine crackers, finely crushed
    1 c. grated Parmesan cheese
    4 eggs, slightly beaten
    1/2 tsp. thyme
    1/2 tsp. oregano
    2 small cloves garlic, minced
    salt and pepper to taste
Preparation
    Wash zucchini and trim ends.
    Cook whole zucchini in boiling salted water for 10 to 12 minutes or until almost tender.
    Drain thoroughly and chop zucchini coarsely.
