Chicken "Gumbo" - cooking recipe

Ingredients
    2 stalks diced celery
    1 medium onion, diced
    1 small green pepper, diced
    2 Tbsp. bacon fat
    1 c. cooked or canned okra
    2 c. canned tomatoes
    1 1/3 c. uncooked rice
    1 qt. turkey or chicken stock
    1 tsp. salt
    dash of pepper
    2 c. turkey or chicken, diced
    2 Tbsp. chopped parsley
Preparation
    Lightly saute first 3 ingredients in fat.
    Add next 6 ingredients and bring to a boil.
    Lower heat and simmer 45 minutes.
    Add chopped meat, heat and serve with parsley.
    Yield: 4 to 6 servings.
