Broccoli Cheese Soup - cooking recipe

Ingredients
    2 pkg. chopped frozen broccoli
    1 carrot, finely chopped
    2 stalks celery, finely chopped
    1 Tbsp. chopped onion
    1 1/2 Tbsp. dried parsley
    1 (46 oz.) can chicken broth
    1 qt. half and half
    1/4 c. cornstarch
    salt and pepper to taste
    1/2 lb. Velveeta cheese
    1/2 c. water
Preparation
    In a gallon pot, bring chicken broth, broccoli, carrot, celery, onion and parsley to a boil.
    Simmer until thoroughly heated, about 1/2 hour.
    While mixture is simmering, mix cornstarch with water, then add along with half and half and Velveeta.
    Cook until thickened.
