Oysters Benedict - cooking recipe
Ingredients

12 to 16 small or medium oysters
4 English muffins
8 slices Canadian bacon
1/2 c. mayonnaise (may be \"lite\")
1/2 c. sour cream (may be \"lite\")
1/4 tsp. dry mustard
1 Tbsp. lemon juice
paprika
Preparation

Split muffins and toast lightly.
Spread thinly with butter. Poach oysters in own juice (a little white wine is optional) until edges curl.
Top each muffin half with slice of bacon.
Place 1 or 2, depending on size, oysters on top.
Keep warm.
Mix rest of ingredients over low heat for \"mock Hollandaise.\"
Spoon over each oyster topped muffin.
Dust with paprika.
