Beef Barley Soup - cooking recipe

Ingredients
    1/2 lb. ground beef or turkey
    1 (14 oz.) can stewed tomatoes, crushed
    3/4 c. sliced mushrooms
    2 cloves garlic, minced
    1/2 lb. Velveeta cheese
    1 1/2 c. cold water
    3/4 c. sliced carrots
    1/2 c. quick barley (uncooked)
    1 tsp. dried oregano leaves
    salt and pepper
Preparation
    Brown meat in saucepan and drain.
    In good-size pot, stir in meat, water, tomatoes, carrots, mushrooms, barley, garlic and oregano.
    Bring to a boil; reduce heat.
    Cover and simmer for 10 minutes or until barley is tender.
    Season to taste.
    Stir in Velveeta cheese until melted.
    Makes six (1-cup) servings. Delicious soup!
