Zucchini Muffins - cooking recipe

Ingredients
    1/2 c. oil
    2 beaten eggs
    1 tsp. vanilla
    1/2 tsp. baking soda
    1/2 tsp. salt
    1 c. nuts, finely chopped
    1 c. zucchini (raw, grated, no seeds or skin)
    1 c. sugar
    1 1/2 c. flour
    1/8 tsp. baking powder
    1 1/2 tsp. cinnamon
Preparation
    Combine oil, eggs, vanilla, sugar and zucchini and blend. Stir in remaining ingredients.
    Do not beat!
    Bake in greased muffin pans at 325\u00b0 for about 20 to 30 minutes.
