Diabetic Gingerbread - cooking recipe
Ingredients

1/4 c. margarine
2 Tbsp. brown sugar
2 Tbsp. molasses
1 egg
1 1/4 c. flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
3/4 tsp. ginger
3/4 tsp. cinnamon
1/4 tsp. cloves
1/2 c. orange juice
1 Tbsp. finely grated orange peel
Preparation

In mixing bowl, cream together margarine and brown sugar.
Add molasses and egg.
In separate bowl, stir together flour, baking soda, baking powder, salt, ginger, cinnamon and cloves. Alternately add flour mixture and orange to margarine and brown sugar mixture, beginning and ending with flour.
Mix in grated orange peel.
Pour batter into oiled and floured 8 x 8-inch baking pan.
Bake at 350\u00b0 for 30 to 35 minutes.
Let cool 20 minutes in pan.
Use lite Cool Whip for topping.
