Country Captain - cooking recipe
Ingredients

1/4 c. flour
1 1/2 tsp. salt
1/4 tsp. pepper
1 chicken, cut up
1/2 c. margarine or butter
1 medium bell pepper strips
1 medium onion, sliced
1 clove garlic, minced
1 1/2 tsp. curry powder
1 (29 oz.) can tomatoes
Preparation

Salt and pepper chicken and coat with flour.
Brown chicken in hot melted margarine on both sides.
Remove chicken; add green pepper, onion, garlic and curry powder to remaining margarine in pan.
Cook until onion and green peppers are tender, not brown. Return chicken pieces to pan.
Add tomatoes and bring to a boil. Cover and simmer for 30 minutes until tender.
Serve with rice.
