Sweet Potato Biscuits - cooking recipe

Ingredients
    8 medium sweet potatoes
    2 Tbsp. yeast
    1 c. water
    2 Tbsp. honey
    1 tsp. salt
    unbleached flour
Preparation
    Cook potatoes in boiling water until soft.
    Dip in cold water to remove skins.
    Mash.
    Mix yeast with honey and water. Let rise until
    double.
    Add
    yeast
    mixture to potatoes with salt.
    Add flour
    until
    bread
    dough
    consistency.
    Roll out 3/8-inch thick. Cut
    in circles.
    Place on pan to rise.
    Bake at 350\u00b0 for 30 to 45 minutes.
    Makes 2 to 2 1/2 dozen.
