Red Rice - cooking recipe

Ingredients
    1 c. onion, chopped
    1 clove garlic, minced
    2 Tbsp. margarine
    2 Tbsp. olive oil
    1 1/4 c. uncooked regular rice
    1 (11 oz.) can tomatoes
    1 (13 oz.) can chicken broth
    1/2 tsp. salt
    1/2 tsp. pepper
Preparation
    Saute onion and garlic in margarine and olive oil until soft in a medium-size saucepan.
    Stir in rice, tomatoes, broth, salt and pepper.
    Heat to boiling.
    Cover. Reduce heat and simmer 15 minutes or until rice is tender or liquid is absorbed.
    Fluff up rice and serve!
    Makes about 8 servings.
