Light And Luscious Fish Fry - cooking recipe

Ingredients
    2 lb. haddock fillet or any firm white-fleshed fish
    2 Tbsp. Dijon mustard
    2 Tbsp. nonfat plain yogurt
    2 Tbsp. snipped chives
    2 Tbsp. minced fresh parsley
    pinch of ground red pepper
    2 c. dry bread crumbs or crushed corn flakes
Preparation
    Rinse the fish and pat dry.
    Cut into 16 equal pieces.
    In a cup, combine the mustard, yogurt, chives, parsley and pepper.
    Rub this mixture onto all sides of the fish.
    Refrigerate for about 20 minutes.
    Coat the fish pieces with bread crumbs.
    Coat a baking sheet with nonstick spray.
    Add the fish in a single layer, with space between the pieces.
    Bake at 375\u00b0 for 10 to 12 minutes, or until the fish flakes easily when tested with a fork.
