Mom'S Sweet Potato Cake - cooking recipe

Ingredients
    1 1/2 c. cooking oil
    2 c. sugar
    4 eggs, separated
    4 Tbsp. hot water
    2 1/2 c. flour
    3 tsp. baking powder
    1/4 tsp. salt
    1 tsp. cinnamon
    1 tsp. nutmeg
    1 1/2 c. grated raw sweet potatoes
    1 c. chopped nuts
    1 tsp. vanilla
Preparation
    Beat oil and sugar; add egg yolks and beat well.
    Blend in hot
    water,
    dry
    ingredients, potatoes, nuts and vanilla. Beat egg
    whites;
    fold\tinto
    batter.
    Pour
    in 3 greased and floured 9-inch cake pans.
    Bake at 350\u00b0 for 25 to 30 minutes.
