Eggplant Casserole - cooking recipe
Ingredients

eggplant
salt and pepper to taste
croutons (the same amount as eggplant)
Mozzarella and Parmesan
sliced tomatoes
salt and pepper
bacon
Preparation

Butter casserole.
Dice up eggplant.
Add salt and pepper. Add croutons on top of eggplant.
Place a good layer of Mozzarella and Parmesan on, then top with sliced tomatoes, salt and pepper. Place bacon over to cover the tomatoes.
Bake at 350\u00b0 for about 45 minutes or until cheese is melted.
