Cayenne Potatoes - cooking recipe
Ingredients

3 Tbsp. olive oil
1 1/2 lb. red potatoes, diced
1 tsp. cayenne
2 tsp. dried tarragon
3 scallions, sliced thin
Preparation

In large skillet, heat oil until hot.
Saute potatoes 20 to 25 minutes, or until golden brown.
Stir in cayenne, tarragon, scallions, salt and pepper; toss to coat potatoes well.
Cook about one minute more.
Serves 4.
