Chicken Jambalaya - cooking recipe

Ingredients
    8 to 10 pieces chicken, cut up
    1/2 c. oil
    1 medium chopped fine onion
    1 c. chopped celery
    1/4 c. chopped green peppers
    1 c. uncooked rice
    2 1/4 c. water
    salt and pepper to taste
Preparation
    Brown chicken in oil. Add onions, celery and green pepper and saut until onions are transparent. Add rice, water, salt and pepper. Cover and reduce heat. Simmer for 1 hour. Add extra water as needed.
