Oat Bran Fruit Muffins - cooking recipe
Ingredients

1 c. uncooked oat bran cereal (fine grain)
1/4 c. sugar
1/2 tsp. soda
1/2 tsp. cinnamon
1 c. skim milk
1 tsp. grated orange peel
1 1/2 c. unsifted all-purpose flour
3 tsp. baking powder
1/2 tsp. salt
1 egg (can use 1/4 c. Egg Beaters)
1/4 c. salad oil
1 small apple, peeled and diced
Preparation

In large mixing bowl combine oat bran, flour, sugar, baking powder, baking soda, salt and cinnamon.
Mix thoroughly; set aside. In small bowl, lightly beat egg with a fork; stir in milk, salad oil and grated orange peel.
Pour all at once into flour mixture; stir just until dry ingredients are moistened.
Fold in apple. Fill 15 greased (with Pam) medium size muffin cups 1/2 full.
Bake in preheated 400\u00b0 oven until done, about 20 minutes.
Yields 15 muffins, 110 calories each.
