Ozark Skillet Breakfast - cooking recipe

Ingredients
    1/2 lb. bacon
    3 to 4 large potatoes
    1/8 c. coarsely chopped onion
    1/8 c. bell pepper (optional)
    1/8 c. jalapeno pepper (optional)
    6 eggs, beaten
    1 c. grated cheese (your choice)
    sour cream
    salt
    pepper
Preparation
    In a large cast-iron skillet, fry bacon until crispy.
    Remove bacon and crumble.
    In bacon drippings, brown potatoes, onion and peppers.
    Drain excess drippings.
    Pour eggs on top; add crumbled bacon.
    Cover and cook over medium-low fire.
    After eggs begin to firm, add grated cheese.
    Cook until eggs are done.
    Top with sour cream.
    Salt and pepper to taste.
    Be creative!
    Add what you like best.
    But, remember, cook slow so you don't scorch the eggs.
