Carrot Oatmeal Muffins - cooking recipe
Ingredients

1 1/2 c. flour
1/4 c. firmly packed brown sugar
1/4 c. sugar
3 tsp. baking powder
1/2 tsp. salt
1/2 tsp. nutmeg
1 tsp. cinnamon
1 c. regular uncooked oatmeal
3/4 c. milk (skim)
1/2 c. melted butter, oleo or butter Crisco
1 egg or 2 egg whites, slightly beaten
1 c. (raw or cooked) carrots, chopped or grated
Preparation

In a large bowl, mix together flour, brown sugar, sugar, baking powder, salt, nutmeg, cinnamon and oatmeal; set aside.
In a small bowl, mix together milk, butter and eggs.
Add wet mixture to dry mixture and blend.
Stir in carrots.
Bake in muffin cups or greased pan for 12 to 15 minutes at 350\u00b0.
You may sprinkle with brown sugar before baking.
Makes 12 muffins.
