Chicken Stir-Fry - cooking recipe

Ingredients
    4 boneless, skinless chicken breasts
    1 can bamboo shoots
    2 sliced stalks celery
    3 peeled, sliced carrots
    1 bunch sliced green onions
    1 head cauliflower
    1 head broccoli
    1 sliced bell pepper
    3 c. cooked white rice
    1/2 large bottle soy sauce
    1 can sliced water chestnuts
Preparation
    Cut chicken into small strips or bite size pieces.
    In large skillet, brown chicken in 2 tablespoons of oil on medium-high heat until almost done.
    Add soy sauce and let simmer 5 minutes.
    Add carrots, cauliflower and broccoli.
    Simmer, covered, 5 to 10 minutes.
    Remove lid; stir and add remaining ingredients with 1/4 cup of water.
    Simmer, stirring occasionally, for 15 minutes.
    When vegetables are tender-crisp, remove from heat.
    Rinse rice with cold water and drain to prevent sticking.
    Pour rice in serving dish and cover with stir-fry before serving.
