Beer Batter Fish - cooking recipe

Ingredients
    1 lb. fish fillets
    oil for deep frying
    1 c. light pancake and waffle mix
    1 tsp. lemon pepper
    3/4 c. beer
    1 egg
    1 1/4 c. saltine cracker crumbs
Preparation
    Pat fish dry with paper towels.
    Cut fish into serving size pieces.
    In deep fryer or heavy saucepan, heat 2 to 3 inches oil to 375\u00b0.
    In shallow dish, combine pancake mix, lemon pepper, beer and egg; mix until smooth.
    Place crumbs in another shallow dish.
    Dip fish into batter then into crumbs, covering completely.
    Fry in hot oil for 3 to 4 minutes, turning once, until golden brown and fish flakes with fork.
    Keep fish warm until all pieces are cooked. Serve with lemon wedges or tartar sauce, if desired.
    Yields 4 servings.
