Windfall Cake - cooking recipe
Ingredients

2 1/4 c. self-rising flour
pinch of salt
3/4 c. butter
1/2 c. sugar
2/3 c. raisins
3 c. apples (weighed when peeled, cored and diced, 12 oz.)
2 eggs
Preparation

Grease deep cake tin or tube pan.
Sift flour with salt into bowl and rub in the margarine or butter (I use butter).
Stir in the sugar, raisins and apples.
Stir in the eggs with a spoon.
Do not beat.
Put mixture into the prepared cake pan.
Bake in oven at 350\u00b0 for 50 minutes, until a skewer inserted in the center comes out clean.
Serve warm from the oven, dredged with powdered sugar.
Serves 8.
