Spinach Chicken Breasts - cooking recipe

Ingredients
    2 Tbsp. and 1/4 c. butter
    2 shallots, chopped
    1 (10 oz.) pkg. frozen spinach, thawed
    1/8 tsp. salt
    dash of pepper
    dash of nutmeg
    4 oz. Swiss or Gruyere cheese, cubed
    2 eggs, lightly beaten
    2 Tbsp. water
    1/4 c. flour
    1/2 c. plain dry bread crumbs
    8 chicken cutlets
Preparation
    In a medium skillet melt 2 tablespoons butter over medium heat.
    Add shallots and cook 5 minutes or until soft.
    Remove from heat.
    Squeeze spinach to remove excess moisture.
    Add to skillet with salt, pepper and nutmeg; stir to mix.
    Spoon into a medium bowl.
    Add cheese and stir until well mixed.
    Cover and chill until mixture holds shape.
    (Shape into 8 equal portions.)
