Scalloped Summer Squash(Yields 5 Servings) - cooking recipe

Ingredients
    3 Tbsp. butter
    1 onion, minced
    1 clove garlic, minced
    1 green pepper, chopped
    4 medium tomatoes, peeled and chopped
    1/2 tsp. salt
    black pepper to taste
    1 1/2 lb. summer squash
    1 c. grated cheese
Preparation
    Heat butter.
    Add onion, garlic and green pepper; saute until tender.
    Add tomatoes, salt and pepper; cook.
    Cut squash in cubes.
    Add 1/2 cup water.
    Cook until tender.
