Ingredients

1 1/2 c. Minute rice, cooked
1 c. shredded Mozzarella cheese
3/4 c. sliced pepperoni, slices cut in 1/2
1 large tomato, diced
2 c. chopped vegetables (green pepper, green onion, ripe olives and mushrooms)
1 c. Italian dressing
Preparation

Mix all together with half of the dressing.
Chill and just before serving, add remaining dressing.
