Rhubarb Bread - cooking recipe

Ingredients
    1 1/2 c. brown sugar, firmly packed
    2/3 c. vegetable oil
    1 egg
    1 c. buttermilk
    1 tsp. salt
    1 tsp. baking soda
    1 tsp. vanilla
    2 1/2 c. flour
    2 c. rhubarb, diced
    1/2 c. chopped walnuts (optional)
    1/4 c. sugar
    1 Tbsp. butter or margarine
Preparation
    Combine brown sugar and oil.
    Stir in egg, buttermilk, salt, soda, vanilla and flour; mix well.
    Fold in rhubarb and nuts.
    Pour into 2 greased and floured loaf pans.
    In a small bowl, combine sugar and margarine.
    Sprinkle over batter.
    Bake at 350\u00b0 for 50 to 55 minutes.
    Done when toothpicks come out clean.
    Cool and serve with margarine, cream cheese or Cool Whip.
    (May be frozen for 6 months.)
