Sweet Pickles - cooking recipe

Ingredients
    4 qt. cucumber slices (1/4-inch thick), unpeeled
    7 1/3 c. vinegar
    3 Tbsp. salt
    1 Tbsp. mustard seed
    6 c. sugar
    2 1/4 tsp. celery seed
    1 Tbsp. whole allspice
Preparation
    Simmer cucumber slices in 4 cups vinegar with salt, mustard seed and 1/4 cup sugar until slices turn slightly yellow (about 15 minutes).
    Cook in covered pot.
    Do not overcook.
    Drain; discard liquid.
    Spoon slices into hot, sterilized jars.
    Bring to boil 3 1/3 cups vinegar, 5 3/4 cups sugar, celery seed and allspice. Pour over pickles.
    Seal at once and process in boiling water bath in canner 5 minutes.
    Remove jars.
    Makes 5 pints.
