Gingerbread Pancakes - cooking recipe
Ingredients

3 eggs
1/4 c. brown sugar
1/2 c. buttermilk
1/2 c. water or milk
1/4 c. brewed coffee
2 1/2 c. flour
1/2 tsp. salt
1 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. ground cloves
1 Tbsp. cinnamon
1 Tbsp. ginger
1 Tbsp. nutmeg
4 Tbsp. margarine, melted
Preparation

Cream eggs and sugar.
Add buttermilk, water and coffee.
Mix well.
In separate bowl, sift together flour, salt, baking powder, baking soda and spices.
Combine the two mixtures and add melted margarine.
Cook on griddle as any other pancakes.
Serve with honey, maple syrup or molasses.
Yield:
3 1/2 cups of batter or 8 to 10 pancakes.
