Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant, cut in 1/2-inch slices
    3 c. tomato juice
    1 medium onion, diced
    1 green pepper, diced
    1/2 clove garlic, crushed
    1/2 tsp. oregano
    1/4 tsp. thyme
    1/4 c. margarine
    grated Mozzarella cheese
Preparation
    Boil eggplant for 5 minutes in salted water.
    Cook sauce (tomato juice, seasonings and onion) until onion is soft.
    Drain eggplant and layer with sauce in casserole.
    Bake 45 minutes at 350\u00b0.
    Cover with cheese and bake 15 minutes more.
