Jambalaya - cooking recipe
Ingredients

2 Tbsp. olive oil or bacon drippings
1 c. chopped onion
1 c. chopped green pepper
1 large clove garlic, minced
1/2 lb. skinless, boneless chicken, cut into 1-inch pieces
1/4 lb. smoked sausage, cut into 1/2-inch pieces
1/2 c. uncooked regular long grain rice
1 1/2 c. V-8 vegetable juice
2 Tbsp. hot sauce
1/4 tsp. crushed thyme
1 bay leaf
1/2 lb. medium shrimp, shelled and deveined
1/4 c. chopped fresh parsley
Preparation

In 3-quart microwave safe dish, combine oil, onion, green pepper and garlic.
Cover with lid; microwave on High 4 minutes or until vegetables are tender, stirring once during cooking.
