Oatmeal Pancakes - cooking recipe

Ingredients
    1 c. quick cooking oats
    1/2 c. all-purpose flour
    1/2 c. whole-wheat flour
    1 Tbsp. sugar
    1 tsp. baking powder
    1/2 tsp. baking soda
    1/4 tsp. salt
    1 egg, lightly beaten
    2 c. buttermilk
    2 Tbsp. canola oil
    1 tsp. vanilla extract
    blueberries, strawberries, etc. (optional)
    syrup (optional)
Preparation
    In a large bowl, combine oats, flours, sugar, baking powder, soda and salt. In another bowl, combine the egg, buttermilk, oil and vanilla; mix well. Stir into dry ingredients just until moistened. Pour batter by 1/4 cupful onto a hot griddle that has been coated with nonstick cooking spray. Turn when bubbles form on top. Cook until second side is golden brown.
