Shirley'S Beans(Low-Fat, Low Cholesterol) - cooking recipe

Ingredients
    1 (2 lb.) bag red beans
    1 large yellow onion, chopped
    1 or 2 chopped, deseeded jalapenos
    1 or 2 carrots
    1 or 2 Tbsp. brown sugar or honey (optional)
    1 or 2 Tbsp. chili powder
    1/2 tsp. salt
    2 or 3 dashes red pepper (optional)
    2 or 3 garlic toes (whole)
Preparation
    Soak beans overnight; drain and cover with fresh water.
    Bring beans to boil; reduce heat.
    Add onion, jalapeno, brown sugar, chili powder, salt, red pepper and garlic.
    Cook for about 1 hour. While cooking, cut carrots into very small bite size pieces.
    Cook for 30 minutes more.
    Remove garlic toes and serve over steamed rice.
    I also add 1 link of Healthy Choice smoked sausage (chopped) when I add the carrots.
    Makes a very healthy, tasty meal.
