Beet Pickles - cooking recipe

Ingredients
    2 gal. beets
    3 c. sugar
    3 c. vinegar
    1 1/2 c. water
    1 tsp. pickling spices
Preparation
    Wash beets and cut tops, about 2-inches from beet.
    Cook beets until tender.
    Set aside to cool.
    When cool enough to handle, peel beets and cut in slices or chunks whichever you prefer.
    Mix sugar, vinegar, water and pickling spices and bring to a boil. Add beets and boil 1 minute.
    Put in jars and seal.
